What's great about it

Making your own Anzac Biscuits is a wonderful tradition to commemorate Anzac Day. The biscuits were originally sent by wives to soldiers abroad as the ingredients do not spoil easilt, so the biscuits kept well during battle. These are one of my healthy takes on the orginial recipe that uses a little less sugar and wholemeal spelt flour.


Makes 24 biscuits.


175 g (1 1/2 cups) rolled oats

150 g (1 1/2 cups) desicated coconut

145 g (1 cup) wholemeal spelt flour

125 ml (1/2 cup) extra virgin olive oil or avocado oil

125 ml (1/2 cup) pure maple syrup

60 ml (1/4 cup) hot water

1/2 teaspoon bicarb soda


1. PREHEAT oven to 160°C fan-forced.

2. COMBINE oats, coconut, spelt flour and bicab soda into a mixing bowl.

3. ADD oil, maple syrup and hot water then mix well.

4. DIVIDE biscuits onto baking trays, lined with baking paper.

5. FLATTEN down with your fingertips.

6. BAKE for 20 - 25 minutes until golden.

7. COOL and enjoy.
