What's great about it

This simple recipe is a wonderful way to cook fish and have dinner on the table in 15 minutes. It was inspired by my first trip to France, where I was overwhelmed by the amazingly fresh and healthy produce people would use in their cooking. 

This recipe utilises a handful of easily accessible ingredients, combining them with fresh pieces of white fish fillet to create a nourishing meal for digestive health. The omega-3s in the fish are perfect for healing your gut. Enjoy this oh so tasty dish!

Ingredients

Serves 2

1 x 400g tin peeled Roma tomatoes 

125 ml (1/2 cup) filtered water

2 tablespoons extra virgin olive oil or generous knob of butter

sea salt and white pepper to taste

500 g white fish fillet (2 skinless, boneless white fish fillets)

2 tablespoons fresh chopped parsley

Method

HEAT the tomatoes with the water and olive oil or butter for 5 minutes until slightly reduced and flavoursome. Make sure to smash the Roma tomatoes with the back of a fork so that they start to mix into the sauce.

LAY the fish fillets over the tomato sauce in the pan and season with a little sea salt.

COVER with a lid and simmer for about 6 - 8 minutes until the fish is cooked through. This depends on the thickness of your fish. 

SPRINKLE with fresh parsley.

ENJOY straight out of the pan.

Fish provides the body with complete protein for building and repair as well as omega 3 that is anti-inflammatory to the body and is needed for digestive health, cardiovascular and brain health. 

Serve alone or with a side of steamed broccoli.
