Summer Berry Crunch

This is a yummy breakfast trifle that will nourish and energise your body. It's rich in whole food antioxidants, protein and probiotics that will support optimum health. I absolutely love this on-the-go breakfast as it takes just a few minutes to make. This recipe is featured in my Purely Delicious Cookbook and it's one that I'll be making these holidays for family and friends.
Berries are packed with polyphenols - an important class of phytonutrients that can help support cardiovascular health. The vitamin C in berries help to produce collagen which naturally supports healthy glowing skin. A study published in the British Journal of Nutrition found that adding strawberries to your meals slowed the insulin responses by delaying the absorption of sugars in the digestive tract. Insulin is an anabolic hormone that increases storage of fat, protein and glucose.
Ingredients
500 g strawberries
Handful of raspberries
1 teaspoon honey or 2 teaspoons pomegranate molasses
500 g cultured Greek style natural yoghurt (use dairy or coconut)
100 g healthy chef granola or your favourite nut and seed mix
Method
- Blend half the strawberries with the raspberries and honey until you have a smooth puree.
- Cut the rest of the strawberries into quarters and mix with the berry puree.
- In a tall glass, alternate layers of berry mix with layers of yoghurt and granola - you could also use a bowl.
- Serve and enjoy.
