How To Make The Perfect Bircher Muesli
What's great about it
This is my signature muesli recipe that is purely delicious! It is low GI and high in fibre to keep blood sugars stable and it's also rich in probiotics, vitamin C and protein to nourish a healthy immune system and digestive system.
It's important to soak the oats overnight in a little water or orange juice to soften the oats and make them more digestible before folding in the yoghurt and grated pear. Scented with orange and vanilla, you’ll be in heaven with every mouthful. I often double the recipe and divide into glass jars so I have enough muesli to take to work for a few days. Enjoy.
Ingredients
Serves 4
1 cup (100 g ) organic rolled oats
1 tablespoon natural protein powder or marine collagen
1 teaspoon Natural Immune Support (optional)
1/4 teaspoon vanilla bean paste
juice from 2 sweet oranges (375 ml) or filtered water
1/2 cup (125 ml) natural Greek style or coconut yoghurt
a little raw honey to drizzle (optional)
2 coarsely grated pears or red apple such as pink lady or fuji
2 whole oranges, peeled and chopped
Method
The night before:
- Combine oats, protein, vanilla and orange juice into a bowl
- Cover and soak overnight in the fridge
In the morning:
- Fold through yoghurt and pear or apple and spoon into glass jars or serving bowls.
- Garnish with fresh chopped oranges and your choice of other nuts and fresh fruits then enjoy.
Notes and Inspiration
Garnish with fresh ripe figs and roasted flaked almonds.
For immune boosting benefits, add 1 teaspoon Natural Immune support into the oats when soaking with the orange juice or water.
