COLLAGEN AVOCADO + EGG SMASH
What's great about it
Collagen is an amazing form of protein, and an easy addition to boost your protein intake at breakfast-time. I've enhanced this smashed avocado + eggs with Healthy Chef Marine Collagen to increase your protein needs even further.
By adding a full serving of the Marine Collagen (2 tablespoons), you’ll be packing 12g of protein into this delicious + simple toast topper.
You can pack even more protein into this dish by adding feta or smoked salmon. Flavourless and odourless, you won’t even notice the collagen has been added, whilst still nourishing your body.
Feel free to embellish the dish with a scattering of capers, pumpkin seeds, spring onion, sea salt, and a drizzle of olive oil.
Ingredients
Serves 2
3 organic eggs, boiled
1/2 a large avocado
pinch of sea salt
pinch of white pepper
squeeze of lemon juice
1 tablespoon of goat's yoghurt
1 tablespoon of Healthy Chef Marine Collagen
2 - 4 slices of gluten free bread, or bread of choice
TO GARNISH
capers, spring onion, pumpkin seeds, sea salt, extra virgin olive oil
Method
MASH together the eggs and avocado with the lemon juice, salt, pepper, yoghurt and Marine Collagen.
TOAST your bread of choice.
SPOON over the avocado and egg mash onto the toast.
GARNISH with capers, spring onion, pumpkin seeds, sea salt and olive oil (optional).
