What's great about it

This deliciously creamy pasta is vegan, gluten free and makes for the ultimate 10 minute meal for a simple lunch or dinner.
This tasty dish is from my cookbook, SIMPLE HEALTHY RECIPES, this recipe is just one example of how easy it can be to pack more nutrient-rich foods into your day with ease, without compromising on flavour. The pasta sauce is simply made from avocado, spinach, olive oil, and basil which is full of fibre and heart-healthy monounsaturated fats and antioxidants that support healthy glowing skin and digestive health as well as maintaining stable blood sugar levels. 
SIMPLE HEALTHY RECIPES

Ingredients

Serves 3-4

 

200 g (7 oz) short pasta, your choice

1 avocado

handful basil leaves

1 tablespoon lemon juice

60 ml (1/4 cup/2 fl oz) extra virgin olive oil

pinch of sea salt and white pepper

60 ml (1/4 cup/2 fl oz) pasta cooking water

1 handful baby spinach leaves

60 g (2 oz) Macadamia Parmesan, to serve

 

MACADAMIA PARMESAN

90g macadamia, light toasted + salted

1/4 clove garlic, just a slither

1/4 teaspoon ground turmeric

 

EMBELLISHMENTS

coconut yoghurt, steamed green beans, edamame beans, basil leaves, garlic confit

Method

COOK the pasta in plenty of lightly salted boiling water until al dente.

MEANWHILE, combine the avocado, basil leaves, lemon juice, olive oil, white pepper and pasta cooking water in a blender or food processor. Blend until smooth and creamy. Taste and adjust if needed, adding more water etc for consistency.

DRAIN the pasta into a large serving bowl, reserving a little more of the cooking water to use if required. Pour over the avocado puree, add the spinach leaves and toss through, adding more water if needed for consistency.

SERVE topped with Macadamia Parmesan and enjoy. You can also toss through steamed green beans or dollop over a little coconut yoghurt before serving.

A healthy boost of antioxidants and healthy fats to keep your body healthy, fit and strong.

Fold through edamame beans and a scattering of capers and chopped, green Sicilian olives for an added flavour boost.
