The Perfect Summer Salad
What's great about it
This is one of the simplest salads of all time to create.The recipe is from my cookbook Purely Delicious. The flavour of this delicious salad depends solely on the quality of the ingredients you use. I especially enjoy making this over the summer months, as juicy, ripe tomatoes are bountiful and at their seasonal best.
1 kg ripe heirloom tomatoes (multiple colours), sliced
2 – 3 balls Buffalo Mozzarella, loosely broken
handful fresh basil leaves
3 tablespoons extra virgin olive oil
flaked sea salt, just a scattering
Fresh crusty sourdough to serve (optional)
SLICE the tomatoes or cut into generous wedges.
PLACE onto serving platter.
BREAK up the mozzarella highly with your fingertips and mingle in amount the tomatoes.
DRIZZLE over olive oil.
FINISH with sea salt and torn basil leaves.
Notes and Inspiration
Drizzle with a splash of aged balsamic or chardonnay vinegar.
