
Lunchbox Friendly Nut-free Cookies


What's great about it
It's back to school week so I thought you would enjoy these lunchbox friendly cookies that are dairy and nut-free. They take just a few minutes to make and your little ones will love them for morning or afternoon tea. These delicious nut-free cookies are made from all-natural ingredients and are free from the processed sugars and preservatives found in many store bought cookies.
Ingredients
2 smashed ripe bananas
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
60 ml cold pressed avocado oil, extra virgin olive oil or coconut oil
60 ml organic maple syrup
150 g rolled organic oats
100 g desiccated coconut
100 g sultanas
1 apple, finely chopped
1/4 cup Healthy Chef Protein (you can use Natural or Vanilla in these cookies)
Generous pinch sea salt
Method
PREHEAT your oven to 160°C / 320°F – fan-forced.
COMBINE smashed banana, vanilla, cinnamon, oil and maple syrup.
ADD oats, coconut, sultanas, apples, Healthy Chef Protein and sea salt.
MIX together well and allow to sit for 5 minutes to allow the oats to soften.
FORM into 12 cookies. I like to use a small ice-cream scoop for this.
BAKE for 30 – 35 minutes or until golden.
COOL and enjoy.
Notes and Inspiration
Use Healthy Chef Pea Protein for a vegan option.
Keeps in air tight container for one week.
