OMG Chocolate Cupcakes
What's great about it
250ml (1 cup/8 fl oz) hot water from a recently boiled kettle
120g (4 oz) coconut sugar
60g (2 oz) dark cocoa powder
125ml (1/2 cup/4 fl oz) extra virgin olive oil
2 large organic eggs
1 teaspoon vanilla extract
180g (6 1/4 oz) spelt flour or gluten free flour
2 teaspoons baking powder
1 teaspoon sea salt
Optional to frost with Ganache (p569 of SIMPLE HEALTHY RECIPES cookbook)
MAKE the chocolate ganache the day before.
PREHEAT your oven to 160°C ( 320°F) fan forced.
COMBINE hot water, coconut sugar and cocoa powder in a bowl.
ADD the olive oil, eggs and vanilla and whisk well until combined.
ADD the flour, baking powder and salt.
SPOON the batter into lined muffin or cupcake tins.
BAKE for 25-30 minutes, remove from the oven and cool.
GARNISH with ganache and enjoy.

Pipe over ganache using a disposable piping bag fitted with a star tube.
