GLUTEN-FREE PROTEIN CHOC CHUNK COOKIES
What's great about it
These spectacular cookies are high in protein, gluten-free, vegan and naturally sweetened. They are made with just a few simple ingredients that include Healthy Chef Organic Pea Protein, almond meal, vanilla, olive oil and a splash of maple, which is totally optional.
Healthy Chef Organic Pea Protein is a plant based, easily digestible protein that promotes lean toned muscle, supports weight management, boosts metabolism and keeps you fuller for longer. Almond meal is rich in healthy fats, fibre, and vitamin E, supporting heart health and providing sustained energy while helping to manage blood sugar levels. I've added a little maple to sweeten and just a little sugar free dark chocolate which makes these taste amazing.
Ingredients
Makes 8-9 cookies
150 g (1 1/2 cups) almond meal
2 tablespoons (40g) Healthy Chef Organic Pea Protein - Vanilla or Natural
60 ml (1/4 cup) olive oil
60 ml (1/4 cup) maple syrup or your choice of sweetener
1 teaspoon vanilla extract
pinch of cinnamon
50 g sugar free dark chocolate, chopped
a little water to mix if needed
Method
PREHEAT your oven to 160°C fan forced.
COMBINE almond meal, pea protein, cinnamon, olive oil, maple syrup and vanilla.
MIX into a soft dough (if your mix is too dry for any reason, add 1 - 2 tablespoons of water)
FOLD in your chocolate so it's evenly mixed through.
FORM into small cookies, using a mini ice cream scoop and place onto a lined baking tray.
FLATTEN the cookies slightly.
BAKE for 15 minutes or until golden.
COOL completely before devouring. Enjoy!
Notes and Inspiration
Add 2 tablespoons of Naked Chocolat to make double chocolate chip cookies.
Add 2 teaspoons of Matcha Green Tea for antioxidant rich matcha choc chip cookies.
