With the festive season just around the corner, I really wanted to share with you my healthy and delicious festive menu, made from wholesome ingredients your family love and that won’t blow your diet!
Each dish is quick and easy to prepare and they are from my #1 bestselling cookbook, Purely Delicious. Here’s a small taste of my spectacular holiday recipes that are completely plant based and guilt free. Enjoy as they are or accompany them with organic chicken or wild caught fish.
BREAKFAST: Breakfast Berry Trifle
This is a yummy breakfast trifle that will nourish and energise your body. It’s rich in whole food antioxidants, protein and probiotics that will support healthy digestion and wellbeing.
LUNCH: Insalata Caprese
This is one of the simplest salads of all time to create. The flavour of this magnificent salad depends solely on the quality of the ingredients you use. I especially enjoy making this over the summer months, as juicy, ripe tomatoes are bountiful and at their seasonal best.
DINNER: Roasted Beetroot Salad with Fig + Smashed Raspberry Dressing
Figs are a delightful festive addition to this dish. I love to eat it simply as is or topped with creamy white goats cheese or Persian feta that rounds out the flavour.
SIDE DISH: Cinnamon Roasted Sweet Potato
Sweet potatoes are divine, especially oven roasted with generous amounts of cinnamon and a little sea salt. You don’t need to do too much to prepare them – they practically make themselves and the final result is pure deliciousness!
DESSERT: Healthy Christmas Cake
This wonderful one-bowl gluten-free cake is perfect for those last minute impromptu visits from friends and relatives. I love the combination of vanilla, orange and cinnamon in recipes and my Christmas cake is the perfect recipe to marry the flavours together. Serve with thick natural yoghurt and orange blossom honey.
