This Espresso Power Porridge is our answer to the season, a warming, deeply satisfying bowl that brings together the ritual of your morning coffee and the grounding comfort of porridge in one beautifully functional recipe.

Stirred through with Healthy Chef Collagen Coffee, this bowl does far more than warm you from the inside out. The addition of grass-fed collagen in this blend can support skin elasticity, joint health and gut integrity - foundations of wellbeing that become increasingly important for women through their 30s, 40s and beyond.

Paired with the slow-release energy of whole grain oats, it delivers steady, sustained fuel that carries you through the morning without the mid-morning slump.

INGREDIENTS

PORRIDGE

1/2 cup (125 ml) water

1/2 cup (125 ml) almond milk, plus a little extra if needed

1 tablespoon golden flaxseed meal

1 tablespoon almond meal, or hemp seeds

1/2 teaspoon cinnamon, ground

1/2 teaspoon vanilla extract

15 mL fresh espresso coffee or 1 tsp Collagen Coffee stirred into 30 mL hot water

stevia, to sweeten (optional)

OPTIONAL EXTRAS

almonds, hemp seeds or hazelnuts, chopped

extra milk of choice, to serve

sliced banana

METHOD

COMBINE water, almond milk, flaxseed, almond meal, cinnamon and vanilla in to a pot. We love to do this process the night before and store the combined ingredients in a glass jar in the fridge. The flaxseed and almond will thicken overnight.

COOK the porridge for 2 minutes until thickened and sweeten to taste if desired.

SERVE topped with a shot of espresso, extra hot milk and any garnishes you love.
