High Protein Salted Caramel Banana Bread

INGREDIENTS

Serves 10

3 ripe bananas, mashed

¼ cup peanut butter or almond butter

60 ml maple syrup

200 g almond meal or almond flour

60 g Healthy Chef Organic Pea Protein Salted Caramel

2 tsp baking powder

pinch sea salt

1 tsp ground cinnamon

125 ml plant-based milk of choice

OPTIONAL EXTRAS
60 g dark chocolate, chopped
1 banana, sliced lengthways for decoration

PROTEIN FROSTING (OPTIONAL)

250 ml coconut yoghurt
2 tbsp Healthy Chef Organic Pea Protein Salted Caramel
1 tsp maple syrup

METHOD

PREHEAT oven to 160°C fan-forced.

LINE a loaf tin with baking paper.

MASH the bananas in a large bowl then stir through the peanut butter and maple syrup until smooth.

ADD the almond meal, protein powder, baking powder, salt and cinnamon. Pour in the milk and mix to form a thick batter. Fold through the dark chocolate if using.

SPOON into the prepared loaf tin and smooth the top. Decorate with extra banana if desired.

BAKE for 50–60 minutes or until golden and cooked through. Cover loosely with foil towards the end of baking if browning too quickly.

REMOVE from the oven and cool completely before slicing.

TO MAKE THE FROSTING whisk together the coconut yoghurt, protein powder and maple syrup until smooth and creamy.

SERVE spread over slices of banana bread or enjoy spooned on top.
