OMG Chocolate Cupcakes

What's great about it
Just like the name, this cupcake recipe will have everyone saying OMG! These chocolate cupcakes are from my new cookbook SIMPLE HEALTHY RECIPES and are gluten-free, antioxidant-rich and totally delicious! Suitable for simple celebrations with friends, your loved ones birthday or just a sweet treat to enjoy on a Sunday afternoon. They are the perfect healthy alternative to store bought cupcake mixes and only require minimal pantry staple ingredients.
Ingredients
250ml (1 cup/8 fl oz) hot water from a recently boiled kettle
120g (4 oz) coconut sugar
60g (2 oz) dark cocoa powder or Healthy Chef Naked Chocolat Dark
125ml (1/2 cup/4 fl oz) extra virgin olive oil
2 large organic eggs
1 teaspoon vanilla extract
180g (6 1/4 oz) spelt flour or gluten free flour
2 teaspoons baking powder
1 teaspoon sea salt
optional to frost with chocolate ganache
Method
MAKE the chocolate ganache the day before (see recipe here)
PREHEAT your oven to 160°C ( 320°F) fan forced.
COMBINE hot water, coconut sugar and cocoa powder in a bowl.
ADD the olive oil, eggs and vanilla and whisk well until combined.
ADD the flour, baking powder and salt.
SPOON the batter into lined muffin or cupcake tins.
BAKE for 25-30 minutes, remove from the oven and cool.
GARNISH with ganache and enjoy.

Pipe over ganache using a disposable piping bag fitted with a star tube.
