Paleo ANZAC Biscuits

This is the perfect ANZAC biscuit for gluten-free + paleo diets that will satisfy that sweet cookie craving, it’s hard to stop at one. These tasty biscuits help boost your metabolism, repair muscle and help stabilise blood sugar levels. Store for about 4 – 5 days for when you’re craving something sweet and healthy. 

 

INGREDIENTS

Serves 22

100 g (1 cup) almond meal

100 g (1 cup) almonds, flaked

75 g (3/4 cups) desiccated coconut

60 ml (1/4 cup) pure maple syrup or raw honey

60 ml (1/4 cup) macadamia nut oil or extra virgin olive oil

1/2 teaspoon bi carb soda (baking soda)

1 - 2 tablespoons water

METHOD

PREHEAT your oven to 120°C fan-forced (250°F).

COMBINE almond meal, flaked almonds and coconut in a bowl.

COMBINE maple syrup and oil into a small pot and heat gently.

MIX the baking soda and water then pour into the honey pot and mix until it starts to froth.

POUR the wet mix into the dry nut ingredients and mix through until combined. Add a little water if needed to help them stick together.

FORM into 22 cookies on a lined baking tray using a spoon or small ice-cream scoop.

BAKE for about 30 minutes until golden.
