What's great about it
Inspired by my favourite health spa Kamalaya in Koh Samui, Thailand, comes this delicious, fresh superfood salad.
Greens are rich in folate to boost your metabolism and help to nourish a dewy and glowing complexion. Goji is high in vitamin C to aid in collagen production and it supports healthy heart function by reducing blood pressure and inflammation in the body. I’m a huge fan of cold pressed extra virgin olive oil, it’s a beautiful tasting, velvety oil and a rich source of antioxidants and monounsaturated oleic fatty acids. Spoon generously over your salad and toss in some avocado, another great source of vitamin E, to boost your skin’s vitality and luminosity.
Ingredients
Serves 1
2 large handfuls mixed salad greens
1/2 chopped roasted or raw beetroot
1 red apple, cut into chunks with skin
1 tablespoon pumpkin seeds
1 tablespoon sunflower seeds
2 tablespoons goji berries
1 teaspoon ground golden flaxseed
1/2 - 1 whole avocado
1 tablespoon aged balsamic
2 tablespoons cold pressed olive oil

Method
- Place the mixed salad greens into serving bowls or large glass mason jars.
- Top salad with beetroot, red apple, and avocado.
- Sprinkle with pumpkin seed, sunflower seed, flaxseed and goji berries.
- Drizzle with olive oil and balsamic then enjoy.
Notes and Inspiration
Add other greens like chopped raw broccoli or grated zucchini.
Add anti -inflammatory spices like raw grated turmeric or ginger.
Make a dressing from Healthy Chef Organic Matcha Green Tea, lime, olive oil and crushed pineapple or mango.
