What's great about it
This is such a simple and purely delicious dish that I just had to share it. My superfood muesli with lush summer berries is my favourite breakfast of the moment. It takes just one minute to prepare and what I love about it is that it makes the perfect portable food so you can easily prepare it into a glass jar and take it to work to enjoy at your leisure. I love to vary the base of the recipe and use a good organic natural yoghurt, coconut kefir or even a silky cashew cream. To this base, I add a spoonful of my antioxidant-rich Organic Superfood which is packed with 10 organic veggies and lush berry fruits that help to nourish my body before I start the day. I top it simply with fresh berries and a scattering of walnut for added omega 3 before it's devoured.
200 g thick natural organic yoghurt or your choice of kefir or yoghurt
1 tablespoon Healthy Chef Organic Superfood
250 g fresh berries (choose from strawberries, blueberries, raspberries, or other red fruits like pomegranate, goji berry, cherry)
Scattering of walnuts or your choice of nut or seed
Makes 1 bowl
- Combine yoghurt and Healthy Chef Organic Superfood - mixing with a spoon until creamy and luscious.
- Spoon onto a serving plate or into a bowl.
- Top with fresh berries and scatter lightly with walnuts.
Notes and Inspiration
Pump up the protein and add 1 tablespoon Healthy Chef Pure Protein.
Swap walnuts for roasted almonds which taste amazing.
Use cashew nut cream or coconut yoghurt in place of natural yoghurt.
Use other seasonal fruits like pineapple + blueberry, fresh peach, fig + pomegranate.
