
Apple Pie Baked Protein Oats

This recipe is also meal-prep friendly, perfect to bake in batches and enjoy over the week to keep your energy levels up.
Ingredients
Serves 2
90 g rolled oats, or gluten-free if desired
1/2 teaspoon Healthy Chef Chai Latte
1/2 teaspoon baking powder
2 - 3 tablespoons Healthy Chef Pure Native WPI or Organic Pea Protein
1 1/2 cups unsweetened almond milk, or your choice
2 tablespoons maple syrup or honey
small handful of sultanas
1 red apple, thinly sliced
EMBELLISHMENTS
Greek yoghurt, Healthy Chef Chai Latte, maple syrup
Method
COMBINE the dry ingredients then add the wet ingredients and mix together.
POUR the oat mixture into an oven-safe baking dish.
SLICE apple thinly using a knife or mandolin.
LAYER the sliced apple evenly on top of the baked oats. Use a fork to lightly press the apple down into the mixture.
BAKE for 15-20 minutes.
REMOVE from the oven and cool.
ENJOY with your choice of embellishments.
Notes and Inspiration
Make this dish meal-prep friendly by splitting the mixture into 2 oven-safe dishes.
Feel free to add extra protein powder to increase the protein content.
