Gluten-Free Christmas Cake Recipe

A spectacular recipe featured in my cookbook Purely Delicious.This is an extremely simple Christmas cake to make and it's loaded with health benefits.

Gluten free - dairy free - refined sugar free and perfect for your festive table this Christmas. This fruit cake is wonderfully moist with a high ratio of fruit, meaning you don't need to use any extra sugar in the recipe. I have also used almond meal in the recipe which makes this cake super moist and purely delicious.

INGREDIENTS

Makes 1 x 20 cm round cake
(double the recipe for a larger cake)

600 g (20 oz) dried fruits (raisins, apricot, sultanas)

1/2  teaspoon ground cinnamon

1 teaspoon ground ginger

1 teaspoon vanilla bean extract

zest from 1 orange

4 tablespoons extra virgin olive oil

2 tablespoons maple or raw honey (optional)

3 organic eggs

220 g (7 oz) almond meal

handful flaked almonds

METHOD

PREHEAT your oven to 160°C fan-forced (320°F).

PREPARE a 20 cm round cake tin with baking paper lining the sides and the base.

COMBINE dried fruit, cinnamon, ginger, vanilla, orange zest and juice, olive oil and eggs in a large bowl.

ADD the almond meal and mix until well combined.

SPOON the batter into your baking tin.

BAKE for 45 - 60 minutes until cooked.

COVER the top with foil if necessary to prevent over-browning.

COOL then enjoy.
