Green Energy Salad

This is a delicious recipe from my book - Your Ultimate Body Shaping Guide. It's rich in plant-based goodness, healthy fats and minerals that support healthy gut function, glowing skin and a lean, toned body. Enjoy as a nourishing lunch or dinner on your body shaping plan.

INGREDIENTS

Serves 1
2 zucchini (courgette), grated

2 tablespoons mint, chopped

2 tablespoons coriander (cilantro), chopped

1 generous handful baby spinach 

2 tablespoons pumpkin seeds

2 tablespoons roasted almonds, chopped

FOR THE DRESSING

1 tablespoon lemon juice or apple cider vinegar

1/2 teaspoon Dijon Mustard

2 tablespoons extra virgin olive oil

pinch of sea salt

METHOD

COMBINE salad ingredients into a serving bowl.

MIX dressing ingredients and pour over the salad.

ENJOY!

NOTES & INSPIRATION

Add raw sauerkraut or kimchi for probiotic benefits.

Boost protein by adding 100 g of tofu, tuna or salmon.
