High Protein Vegan Berry Baked Oats

Wake up to your new morning breakfast. This recipe is vegan, high in protein, omega 3, antioxidants and fibre as well as being sugar-free. You won’t believe how amazing this tastes. This is currently my new obsession, and I normally make a batch on Sunday and divide it into portions so I can enjoy it throughout the week. 

Featuring Healthy Chef Organic Pea Protein, this blend is packed with essential amino acids + protein to keep you feeling satisfied and sustain lean, toned muscle. Healthy Chef Chai Latte is in this delicious breakfast as well to add a delicate spiced flavour. Our Chai Latte blend is sugar-free, vegan and made with antioxidant-rich Rooibos tea. 

These baked oats are delicious hot or cold, served with plant milk or a good dollop of yoghurt. 

High Protein Vegan Berry Baked Oats Recipe

INGREDIENTS

Serves 6

2 cups rolled oats

2 cups unsweetened almond milk, or your choice of plant milk

2 tablespoons Healthy Chef Organic Pea Protein - Vanilla or Natural

1 - 2 teaspoons Healthy Chef Chai Latte

2 teaspoons vanilla extract

1 teaspoon baking powder

1 ½ cups blueberries

¼ cup walnuts, chopped

3 figs halved, optional

maple syrup, optional

hot or cold milk, to serve

METHOD

COMBINE the oats, milk, pea protein, chai latte, vanilla, baking powder, ¾ of the berries and walnuts into a bowl. Mix well. Allow this to soak for 15 minutes or better still a few hours to allow the oats to soften and absorb the milk.

POUR the mixture into a baking dish, Top with reserved berries and figs, if using.

BAKE for 30 - 40 minutes in a preheated oven 180°C fan forced.

SERVE warm or cold with hot or cold milk and enjoy. Drizzle over a little maple if you want it sweeter.

NOTES & INSPIRATION

For a gluten-free version, you can use rolled quinoa, rice or buckwheat in place of the oats.
