MANGO SUMMER SALAD

My Mango Summer Salad is a favourite in the Healthy Chef kitchen, when mangoes are in season and bursting with antioxidants and summer goodness. Lime juice rounds out the sweetness of the mango and the avocado marries the flavours perfectly.

Ingredients
Serves 2-4
2 mangos, peeled and sliced
2 cucumbers, peeled and chopped
4 spring onions, sliced
2 red capsicums, diced
1 bunch parsley, chopped
juice from 2 limes
pinch of sea salt
2 tablespoons extra virgin olive oil
2 avocados, cut into chunks
Method
COMBINE mangoes, cucumbers, spring onion, capsicum, parsley, the juice from 2 limes, sea salt and olive oil in a large bowl and toss through gently.
GENTLY fold through the avocado chunks.
SERVE and enjoy.
Notes and Inspiration
Add a splash of green tabasco (Jalapeno sauce).
Use coriander in place of parsley.
Add a tin of cooked black beans for a protein boost.
