Salted Caramel Peanut Butter Protein Balls

Sweet, salty, chewy and purely delicious. These Salted Caramel Peanut Butter Protein Balls taste like little bites of salted caramel cookie dough, but they’re made with simple wholefood ingredients and take just 5 minutes to make. 

Packed with oats, dates, peanut butter and Healthy Chef Salted Caramel protein, they’re the perfect grab-and-go snack for busy mornings, post-workout fuel, lunchboxes or that 3pm sweet craving when you want something delicious that loves you back. 

INGREDIENTS 

Makes 14 - 16 balls

150g fresh pitted dates, such as medjool

1 cup rolled oats 

½ cup desiccated coconut 

50 g Healthy Chef Salted Caramel Pure Native WPI 

½ cup peanut butter (or almond/macadamia butter) 

Pinch of sea salt 

1 tsp vanilla extract (optional) 

A little water if needed to bring together 

TO COAT (optional) 

chopped peanuts, extra coconut + oats, granola

METHOD 

ADD dates, oats, coconut and protein powder to a food processor. Blend until the mixture resembles fine crumbs.  

ADD the peanut butter and vanilla and blitz again. 

TRANSFER to a bowl. Add a little water if needed to bring it into a soft dough.  

SCOOP out portions using a small ice cream scoop and roll into 14-16 balls.  

ROLL in chopped nuts, oats or coconut or granola if desired.  

STORE in the fridge for up to 14 days. They can also be frozen.
