Salted Caramel Protein Date Bark

This date bark recipe is the ultimate guilt-free treat. Try our version of the viral snack featuring Healthy Chef protein for an added nutrient boost. This no-bake recipe is high in protein and fibre and free from gluten, refined sugars and nasties, so you can fuel your body with only quality, clean ingredients.

Salted Caramel Protein Date Bark Recipe

INGREDIENTS 

Serves 6 - 8

340 g medjool dates, pitted (around 22 dates) 

100 g peanut butter, or your choice of nut butter

100 ml warm water 

3 tablespoons Healthy Chef Salted Caramel Pure Native WPI or Organic Pea Protein 

80 g quality dark chocolate, melted (we used 70% cocoa)  

pinch of sea salt flakes

METHOD 

HALVE the medjool dates and lay on a lined baking tray close together. Press down and flatten using your fingers and/or a spatula. 

COMBINE peanut butter and warm water together until the mixture is runny. Stir in protein powder and set aside. Add an extra splash of water if needed. 

SPREAD peanut butter mixture evenly over the dates. Set aside.  

MELT dark chocolate and spread over the peanut butter layer.  

SPRINKLE with flaky sea salt and place in the freezer until set. This can take a few hours.   

SLICE into 6-8 pieces and enjoy!
