SUGAR-FREE VEGAN PROTEIN BREAKFAST COOKIES

Ingredients
3 large ripe bananas, smashed
1/2 generous cup almond butter (or your choice of peanut butter, tahini or macadamia nut butter)
2 heaped tablespoons of Healthy Chef Organic Pea Protein - Vanilla or Natural
1 teaspoon ground cinnamon
1 splash vanilla extract, optional
2 cups rolled oats, you can also sub quinoa flakes
1/4 cup pumpkin seeds or sugar free chocolate chips, optional
Method
PREHEAT your oven to 170°C fan forced.
COMBINE the banana, almond butter, protein, cinnamon and vanilla into a bowl.
ADD the rolled oats and mix well until combined. These cookies are not very sweet, but taste delicious. For a sweeter cookie, add your choice of sweetener. You can also add dried raisins or dates.
MAKE into 12 cookies, using an ice-cream scoop and flatten down slightly. Top with pumpkin seeds or chocolate chips, if using.
BAKE for 20 minutes until golden.
COOL then enjoy.
STORE in the fridge for up to 5 days. They can also be frozen.
