Detox Cookies

These delicious cookies were inspired by my favourite health and wellness retreat Kamalaya, in Koh Samui Thailand. These Detox Cookies are so delicious and make a terrific healthy snack if you're craving something a little sweet. Naturally sweetened with organic dried fruits, they contain buckwheat and seeds which are high in minerals and essential fatty acids necessary for good health. 

Detox Cookies Recipe

INGREDIENTS

Makes 15 delicious cookies

50 g dried figs

50 g dried prunes

50 g dried apricot

30 g raisins

15 g ground flaxseed

15 g pumpkin seed

15 g sunflower seed

50 g buckwheat flour

1 - 2 tablespoons water

METHOD

Combine the ingredients into a food processor.

Process until the mixture is combined, sticky and soft.

Line a tray with baking paper.

Portion 20 g cookies onto the tray.

Bake the cookies for 20 minutes in a low 160 C oven until just set, but still soft.

Cool on the tray and store in an airtight container.

Enjoy with your favourite tea.
