Collagen Glow Bliss Balls

We regularly serve this recipe as part of our tasting days at Healthy Chef HQ, but they have become so popular with our attendees that I just had to include them in my cookbook Earth To Table. They're the perfect snack-sized beauty bites that are rich in vitamin C and pure collagen protein to help you glow from the inside out.

Collagen Glow Bliss Balls Recipe

INGREDIENTS

Makes 15 - 20 balls

150 g almond meal

100 g desiccated coconut + extra for rolling

2 tablespoons Healthy Chef Beauty Collagen or Gut Collagen

1 - 2 tablespoons Healthy Chef Pure Native WPI - Vanilla or Natural

2 oranges, for juice and zest

200 g dried apricot

1 tablespoon pure maple syrup or a little stevia to sweeten

METHOD

COMBINE almond meal, coconut, collagen, Pure Native Whey Protein Isolate, the zest from 1 orange and the dried apricot into a food processor.

PROCESS until combined. The mix should be moist, golden and crumbly.

SPOON the mix into a mixing bowl, then add the maple syrup and the juice from one orange.

SQUISH together with your hands until you have a soft delicious ball, adding more orange juice or water if required for mixing. Remember this mix should be lovely and squishy.

ROLL into balls then in desiccated coconut.

REFRIGERATE before serving and enjoy.
