INGREDIENTS

Serves 6

1 cup shelled edamame, fresh or frozen

small handful of fresh mint

1/2 bunch fresh parsley

1/2 bunch fresh basil

juice of 1 lemon

zest of 1 lemon

1/4 cup pine nuts

1/4 cup extra virgin olive oil

1/3 cup filtered water

2 tablespoons Healthy Chef Grass Fed Collagen

sea salt and black pepper, to taste

hemp seeds, to garnish

extra virgin olive oil, to garnish

lemon wedges, to garnish


TO SERVE

Carrot sticks, celery sticks, toasted sourdough

METHOD

BLANCH frozen edamame in a saucepan of boiling water for 30 seconds - 1 minute, until softened, then drain. If using fresh, cook for up to 5 minutes. 

BLEND blanched edamame in a high-powered blender or food processor until smooth.

ADD herbs, lemon juice and zest, pine nuts, olive oil, salt and pepper to the edamame and blend again until smooth. Add 1/3 cup of filtered water to smooth out the mixture even more.

ADD Grass Fed Collagen to the mixture and blend again until combined.

SPOON into a serving bowl and garnish with pine nuts, hemp seeds, olive oil and lemon wedge.

SERVE with carrot and celery sticks or enjoy on toasted sourdough.
