HIGH PROTEIN BANANA BREAD

I’ve used almond meal in my recipe, which makes this bread lower in carbohydrates, boosts protein, and is gluten-free. Almond meal is also rich in healthy fats, fibre, and vitamin E, contributing to overall cardiovascular health. A generous spoonful of cinnamon adds a natural sweetness while supporting blood sugar and boosting your metabolism.

Ingredients
3 large ripe bananas, smashed
1 1/2 cups almond meal
1/2 cup Healthy Chef Organic Pea Protein - Vanilla or Natural
1 tablespoon Healthy Chef Marine Collagen
3 large organic eggs
1/4 cup olive oil
1 teaspoon ground cinnamon
2 teaspoons baking powder
pinch of salt
1 teaspoon vanilla extract
EMBELLISHMENTS:
1/4 cup chopped nuts or dark chocolate chips (optional, for added texture and omega-3)
Method
PREHEAT your oven to 170°C fan-forced.
LINE a loaf pan with baking paper.
COMBINE the mashed bananas, eggs, oil, cinnamon, baking powder, salt and vanilla in a bowl.
ADD the pea protein, collagen, almond meal and mix well.
ADD embellishments if using.
SPOON the batter into the prepared loaf pan and smooth the top with a spatula. Lay banana on top for my signature touch.
BAKE for 40-45 minutes.
COOL completely then enjoy.
THIS bread will last for 5 days in the fridge. It can also be frozen.
SERVE with a dollop of gut friendly yoghurt for a lush experience.
DELICIOUS toasted and topped with almond butter.
Notes and Inspiration
Add an extra banana and another ½ cup almond meal if using Healthy Chef Pure Native WPI.
