High Protein Superfood Cheesecake

Looking for a high-protein, no-bake cheesecake that’s both nourishing and purely delicious? This creamy, high-protein superfood cheesecake recipe features Healthy Chef Pure Native WPI and Organic Superfood to create a naturally sweet treat that’s rich in protein and antioxidants, providing over 10g of protein per serve!

Perfect as a healthy snack or lighter dessert, this easy no-bake cheesecake delivers smooth texture, satisfying flavour, and clean nutrition, making it an ideal option when you’re craving something sweet while still supporting your everyday wellbeing.

INGREDIENTS

Makes 8 mini cheesecakes or 1 large cheesecake

BASE

1/2 cup rolled oats

1/2 cup raw almonds

1/3 cup dates, pitted

¼ cup desiccated coconut

½ cup water, to blend, see notes

FILLING

1 cup cottage cheese

1 cup natural Greek yoghurt

3 tablespoons Healthy Chef Pure Native WPI Vanilla or Natural

1 teaspoon vanilla extract

¼ cup pure maple syrup

TOPPING

1 tablespoon Healthy Chef Organic Superfood

handful of blueberries

METHOD

COMBINE all the base ingredients together in a food processor until the mixture comes together.  

SPOON an even amount of the base mixture into a silicone muffin tray or large lined circular cake dish and press down firmly.

BLEND all the filling ingredients together in a high-powered blender.

RESERVE 2-3 tablespoons of the filling mixture in a small bowl and combine with Healthy ChefOrganic Superfood until smooth. Set aside.

POUR the filling mixture evenly on top of the base layer in the silicone muffin tray or lined cake dish.

DRIZZLE the Organic Superfood mixture onto the top of each cheesecake and swirl using a skewer or knife.

GARNISH the cheesecake(s) with a few blueberries.

FREEZE for up to 3 hours.

REMOVE the cheesecake(s) out of the tray or moulds when ready to serve.

NOTES & INSPIRATION

For a gluten-free version, swap out the oats for 1/2 cup of raw nuts of your choice and add a few more dates to help the base mixture stick together.

We suggest blending the base ingredients together first before adding the 1/2 cup of water.

Feel free to omit the coconut if you don't like it.
