What's great about it

Every year, I like to recalibrate my diet and get by body set for a fabulous year ahead.  This year I’ve designed a gorgeous detox salad that will balance hormones, boost your metabolism and get you back on track for the year ahead.

Ingredients

Serves 1

 

4 generous spoonfuls hummus (recipe in my book Purely Delicious)

1 baby cos or gem lettuce, halved

2 sheets crisp nori seaweed, crumbled

4 Brazil nuts, chopped



APPLE CIDER VINEGAR DRESSING:

1 teaspoon Dijon mustard

1 tablespoon apple cider vinegar

3 tablespoons extra virgin olive oil

Method

1. SPREAD hummus between 2 serving bowls.

2. TOP with lettuce, then add nori and Brazil nuts.

3. MIX dressing ingredients together and drizzle over the salad.
 

Notes and Inspiration

Use my baba ghanoush recipe in place of the hummus.
