Healthy Protein Pancake Recipe

These budget-friendly pancakes make a delicious high-protein breakfast or snack. They are great as a post-workout meal and are also gluten-free and sugar-free. 

Each pancake contains close to ~10g of protein which is amazing!  Enjoy them topped with Greek yoghurt, berries and a little maple. This dish is pure goodness made with just a few simple ingredients.

Protein Pancake Recipe With Cottage Cheese

I love using cottage cheese in this recipe as it’s high in protein, lower in fat, and it mixes wonderfully with Healthy Chef Pure Native WPI to boost the nutritional profile.  These protein-packed pancakes are an excellent way to fuel your day, helping to keep you full and support lean toned muscle and overall health.

Protein Pancakes Recipe

INGREDIENTS

Serves 2, or 1 if you're hungry | Makes 5 - 6 pancakes

1/2 cup almond meal 

2 tablespoons Healthy Chef Pure Native WPI - Vanilla or Natural

1/2 cup cottage cheese, or mashed banana 

2 large organic eggs

1 teaspoon baking powder

EMBELLISHMENTS

ground cinnamon, maple syrup, Greek yoghurt, fresh blueberries

METHOD

COMBINE all ingredients in a small food processor or by hand.

COOK for 2 mins on each side in a heated frypan over low-medium heat. You can use a little olive oil to cook, if needed.

SERVE with your choice of berries, yoghurt and maple.
