Spiced Chai Collagen Tart
This tart has a creamy centre, infused with Healthy Chef Chai Latte and Marine Collagen to create an utterly delicious dessert. The warming spices of chai not only give each bite a depth of flavour but is also soothing to the digestive system.

INGREDIENTS

BASE

1 ½ cups almonds

½ cup desiccated coconut

2 tbsp Healthy Chef Naked Chocolat Mylk

2 tbsp coconut oil, melted

2 tbsp maple syrup

Pinch sea salt


FILLING

1 heaped tbsp Healthy Chef Chai Latte

2 tbsp Healthy Chef Marine Collagen

1 ½ cup cashews, soaked in hot water for at least 30 mins

1/2 cup maple syrup

1/2 cup coconut milk

2 tsp agar agar

METHOD

BLEND almonds, coconut, Healthy Chef Naked Chocolat Mylk, maple syrup, coconut oil and salt in a high-speed blender.


PRESS mixture into a 20cm tart tin with your fingers and place in the fridge to set.

COMBINE coconut milk, Healthy Chef Chai Latte, and maple syrup in a saucepan over medium heat for 2 minutes, stirring occasionally until infused.

POUR mixture into a blender with the soaked cashew nuts and agar-agar. Blend until smooth. Carefully pour the mixture back into the saucepan and heat for 2-3 mins until the mixture starts to boil and thicken.

POUR the mixture into the tart casing and leave it in the fridge for at least 2 hours to set.

TOP with star anise, cinnamon quills, bee pollen and roasted hazelnuts.
