This is such a simple yet stunning recipe that I love for breakfast or as a healthy dessert! It's perfect for when I feel like something indulgent yet still light and healthy.
You'll find this simple yet gorgeous recipe in the 'Naked Chocolate' chapter of my cookbook Healthy Baking. Made from three ingredients, this mousse is full of antioxidants as well as probiotics for digestive health.
Ingredients
250 g (8 oz) thick coconut yoghurt or Greek style yoghurt
60 g (2 oz / 1⁄2 cup) Naked Chocolat
2 tablespoons maple syrup or raw honey
TOPPINGS
banana
roasted hazelnuts
cacao nibs
granola
berries
Method
COMBINE yoghurt, Naked Chocolat and maple syrup into a mixing bowl.
WHISK using a small hand whisk for a minute or until the ingredients are combined.
DIVIDE between 2 serving glasses or bowls.
TOP with your choice of toppings.
Notes and Inspiration
Boost antioxidants and mix through 1⁄2 teaspoon organic matcha. Whisk in 2 tablespoons of cold-pressed coconut oil and set in the fridge for 30 minutes for a firmer mousse. Add aromatics such as vanilla and cinnamon.
