Mango + Coconut Icy Pops
My Mango + Coconut Icy Pops are an all-natural alternative to the sugary-filled frozen versions found on the shelves of supermarkets and grocery stores. Enjoy the refreshing summery flavours of this healthy treat with fresh mango, electrolyte-rich coconut water, natural yoghurt and a dash of protein using Healthy Chef Pure Native WPI. 

INGREDIENTS

Makes 5-6

2 mangoes, peeled + chopped

3 cups coconut water

2 cups Greek yoghurt, or your choice

2 tablespoons Healthy Chef Pure Native WPI - Vanilla

METHOD

BLEND the yoghurt with 2 cups of coconut water and Healthy Chef Pure Native WPI.

DIVIDE the yoghurt mixture amongst the popsicle moulds. Freeze for up to 5 hours. This will help create a distinct layer between the yoghurt + mango flavours. 

BLEND mango and 1 cup of coconut water until smooth.

POUR the mango mixture evenly amongst the popsicle moulds, over the yoghurt layer. 

FREEZE overnight.
