What's great about it
This recipe is featured in my cookbook Healthy Baking, and is one of my favourite recipes to whip up for breakfast or as a quick meal on-the-go. Matcha green tea is brimming with powerful antioxidants and anti-ageing properties – even more than pomegranates and blueberries – that has led the Chinese to have coined it “the elixir of immortality”. The addition of Healthy Chef Protein in this recipe helps support healthy skin, hair, nails and digestion.
Ingredients
Serves 2
1 avocado, seed removed
2 tablespoons of natural yoghurt
1 handful of baby spinach
2-3 tablespoons of freshly squeezed lime juice
1 teaspoon organic maple syrup
1 cup ice
1 teaspoon Healthy Chef Matcha
1 tablespoon Healthy Chef Everyday Greens
1 tablespoon Healthy Chef Protein Powder
Toppings:
Kiwi
Blueberries
A dollop of yoghurt
Method
- Combine avocado, yoghurt, baby spinach, lime juice, maple syrup, ice, Matcha Tea, Everyday Greens and Healthy Chef Protein in a high-speed blender.
- Blend until smooth and creamy.
- Spoon into 2 serving bowls.
- Top with some sliced kiwi, fresh blueberries and a dollop of yoghurt.
- Serve and enjoy.
