Orange Blossom Cupcakes

Sumptuous Orange Blossom Cupcakes from the cookbook Healthy Baking. Super easy to make and perfect for the whole family as a healthy snack or impromptu afternoon tea. Made from a base of ground almonds and caressed with orange, vanilla and a little honey, these cakes provide a rich source of protein and are gluten-free!
300 g almond meal
1/2 teaspoon bicarb soda
125 ml raw honey
60 ml extra virgin olive oil
3 organic eggs
zest from 2 navel oranges
2 teaspoons vanilla extract
Thick Greek yoghurt to garnish
orange segments to garnish
PREHEAT your oven to 160°C fan-forced (320°F).
COMBINE almond meal and baking soda.
COMBINE olive oil, honey, eggs, orange zest and vanilla into a separate bowl.
POUR the wet ingredients into the almond meal mixture and mix through.
SPOON into cupcake tins and bake for 30 minutes.
COOL and dollop with yoghurt and garnish with orange segments.
Notes and Inspiration
Sprinkle over a litte bee pollen.
Add 1 teaspoon Healthy Chef Turmeric Latte.
