What's great about it
This delicious muesli is from my cookbook Purely Delicious and it's packed with antioxidants, protein and fibre. Reminiscent of apple pie using a simple ingredients. I've used pink lady apples in this recipe but you can also use ripe pear or other fruits in season.
Almonds are a great source of protein and vitamin E. Vitamin E is a vital antioxidant to help nourish and protect the skin. I've also added Healthy Chef Marine Collagen to help boost the amino acid profile and nourish the skin.
Ingredients
Serves 1-2
2 tablespoons raw soaked almonds (see notes)
1 tablespoon flaked coconut
1 tablespoon pumpkin seeds or sunflower seeds
1 apple or pear cut into dice with skin
1 tablespoon Healthy Chef Marine Collagen
1 - 2 fresh pitted dates or apricots
Thick natural yoghurt or or Almond milk to serve
blueberries, strawberries, kiwi , oranges etc o serve
Method
COMBINE soaked almonds, coconut, seeds, pitted fresh dates, chopped apple and marine collagen into a food process.
LIGHTLY PULSE for 10 - 15 seconds, or until just combined and mixed in a little - you still want nice chunks of fruit and nuts.
FOLD THROUGH the blueberries or other fruits you love.
ENJOY with almond milk or thick natural yoghurt with live cultures.
Notes and Inspiration
Use brazil nuts in place of almonds for a selenium boost to nourish the thyroid.
Blend into a smoothie with water or almond milk ! it's delicious.
Boost protein and add 1 tablespoon Healthy Chef Protein when blending.
Add a Superfood boost and mix in 1 tablespoon Healthy Chef Organic Superfood with your yoghurt before eating.
