What's great about it

I find nothing more rewarding than making my own muesli. And with the weather warming up, this delicious raw muesli is ideal for those sunny mornings when I crave a lighter breakfast. It's ready in minutes, and with just four simple ingredients, is a perfect quick and healthy start to my busy day. Look for organic apples without pesticides. Almonds are packed full of protein and heart healthy fats that are kind to your arteries, help lower cholesterol and keep blood sugars stable and also are rich in Vitamin E, the most important antioxidant for the skin protecting skin agains ageing.

Ingredients

Serves 1

 

handful of raw almonds ( 1/4 cup )

2 tablespoons organic flaked coconut

1 red apple, cut into dice with skin

4 fresh pitted dates

Almond Milk or yoghurt to serve

Fresh fruit and boosters to serve

Method

 

  1. Combine ingredients into a food process or blender.
  2. Process for 10 - 15 seconds, or until just combined and mixed in a little.
  3. Place into a bowl and fold through blueberries and banana
  4. Enjoy with almond milk or thick natural yoghurt with live cultures.

Notes and Inspiration

Add fresh figs, orange zest and pomegranate in place of banana and blueberry.

Use brazil nuts in place of almonds.

Blend into a smoothie with coconut water! It's delicious.

Boost protein and add 1 tablespoon Healthy Chef Protein when blending.
