MANGO MATCHA CHIA PUDDING

Ingredients
Serves 3-4
½ cup chia seeds
2 ½ cups almond milk
2 tablespoons Healthy Chef Protein - Pure Native WPI or Organic Pea Protein
2 teaspoons Healthy Chef Matcha Tea
a splash of maple syrup or some monk fruit to sweeten, optional
natural Greek yoghurt, or your choice, to serve
1 Mango, chopped
Method
COMBINE the ingredients except the yoghurt and mango into a blender and blitz until combined and the mixture is creamy. If you don’t have a blender, just mix it all up in a large bowl and allow it to set for at least 1 hour in the fridge to gel and thicken.
DIVIDE between serving glasses, top with a little yoghurt, followed by the mango chunks.
