Healthy and delicious chocolate chip cookies made with heart-healthy extra-virgin olive oil, omega 3 rich walnuts and quality dark chocolate, the perfect treat if you're needing a healthy snack. Spelt flour has a lower gluten content so its kinder to the digestive system, spelt flour is also a good source of protein has around 20% more protein + up to 65% more amino acids than traditional wheat flours.
Ingredients
125 ml extra virgin olive oil
2 teaspoons vanilla extract
2 organic eggs
40 g coconut sugar
2 tablespoons maple syrup
240 g wholemeal spelt flour
60 g almond meal
1 teaspoon baking powder
100 g dark chocolate (70%), chopped
100 g walnuts, chopped
Method
PREHEAT your oven to 160°C fan forced.
COMBINE olive oil, vanilla, eggs, coconut sugar and maple into a bowl.
ADD the flour, almond meal and baking powder.
SQUISH THROUGH the dark chocolate and walnuts to form a soft dough.
SCOOP OUT into 10 - 12 portions using an ice cream scoop and flatten with your fingers.
BAKE for 20 - 25 minutes until golden.
COOL before devouring.
Notes and Inspiration
Use raisins in place of choc chips.
