Chocolate Collagen Peanut Butter Dates

12 fresh medjool dates, pitted
⅓ cup natural crunchy peanut butter
Raw Dark Chocolate
125 g (1/2 cup) cacao butter, melted
60 g (1/2 cup) Healthy Chef Naked Chocolat Dark
2 tbsp pure maple syrup
1/2 tsp vanilla bean paste, or extract
pinch of sea salt + extra for garnish
COMBINE melted cacao butter, Naked Chocolat, maple syrup, vanilla and sea salt in a bowl.
MIX well using your small whisk for about 5 minutes until smooth and creamy.
FILL one date at a time with ½ tsp peanut butter and place it on a plate. Repeat this to fill each date.
COAT each date in chocolat using 2 forks, place onto a clean plate and garnish with sea salt.
PLACE in the fridge for at least 1 hour to set.
